I've found several Binary Planet systems, but I wonder if it would be better to edit a system to match what I'm looking for, and how hard that would be.....

How hard is editing a system?
How scientifically accurate would it be?

Not very hard, and however accurate you choose to make it.

Instructions on how to do all of these things exists here. Please try to find an appropriate thread to post in first before creating a new one.
